How to have a healthy Halloween
Tonight, households across the country will have carved up pumpkins in and outside to ward off evil spirits as we celebrate Halloween. Although 90% of pumpkins are bought around Halloween, the pumpkin season actually lasts from October to December.
Pumpkins are full of fibre, low in calories and contain many vitamins and minerals that help enhance your immune system – enabling you to not only ward of evil spirits but fight off coughs and colds too!
Here are some great ways of adding pumpkins into your daily menu:
- Roast Pumpkin Lasagne – A hearty filling dish that will contribute towards your 5 pieces of fruit and vegetables a day
- Roast Pumpkin and Coriander soup – A refreshing and easy meal, great to warm you up after a nice Autumn walk
- Make a side dish – Add pumpkin to mash to make a healthy side that will keep you full for longer due to the increased fibre content
- Don’t forget the seeds – These not only make a great snack but contain zinc which is an important mineral for boosting the immune system further
